Several people asked about the funeral potatoes I referred to in one of my posts. So here’s the recipe…
Funeral Potatoes
Ingredients:
2 lb. bag hash browns
1⁄2 cup butter
2 (10 3/4 ounce) cans condensed cream of chicken soup
1 pint sour cream
1⁄2 teaspoon salt
3⁄4 cup onion, chopped
1 tablespoon butter
2 cups sharp cheddar cheese, grated, firmly packed

1 1⁄2 cups corn flakes, crushed
4 tablespoons butter, melted

Directions:
Saute onion in 1 tablespoon butter until translucent.
Mix all ingredients, except cornflakes and 4 tablespoons butter, together.
Put potato mixture into a 9×13 inch baking pan.
Combine cornflakes and butter, and sprinkle evenly over top of casserole.
Bake at 350 degrees F for 40-50 minutes or until heated and bubbly.

I change this up just a little and use Ore-Ida Potatoes O’Brien because we like the green and red peppers. BUT I boil them for about three minutes first, and they don’t stretch as far. If I use just the shredded potatoes I always chop up a few green onions and chuck them in there. And I confess I don’t often use the cornflakes on them.
But they’re fast and good and you don’t have to peel the bloomin’ potatoes!!! 😀

Not been around for a while and apols for being delayed (again!) in getting back here. This post caught my curiosity and the photo looks like an ‘au gratin’ recipe we had to make in school cooking lessons – though not using hash browns (they used to insist on calling cooking class ‘Home Economics’ back then!) I’ve not been one for cooking much lately anyway, but maybe I’ll try a veggie version one of these days 🙂 Belated happy Christmas and best wishes for the New Year 🙂

Can you make these with ordinary potatoes, not just hash browns and should I use vegetable stock instead of Chicken stock for us Vego weirdos here in OZ? And one question: Why ‘funeral’…? Yum, though, who doesn’t love any sort of potatoes!

They call them funeral potatoes because when ever there’s funeral dinner (potluck style) you can count on getting a half dozen of these dishes. LOL Hm… on the vegan question. It’s not stock it’s using, it’s creamed soup. If you could find a cream of vegetable soup I’m thinking that would work. It needs to be creamy as that’s a binding agent (or however it would be called). Ordinary potatoes… I’m guessing if you pre-cook the taters and shred them they would work. Are you one of the Munchkins, bac??? LOL No! I know you. You hang out over in Lothlorien under the Malorn trees! Is it time for another adventure? 😀

Thanks Calen. I’ve copied the recipe but won’t be baking it this Christmas! Adelaide will be sweltering in a heat wave – 4o C – hottest capital city in THE WORLD on Christmas Day, and hottest here in decades. No cooking of any kind for me.

I wouldn’t cook either if I had a choice! But I’d hate to put someone to work on Christmas day because I didn’t want to cook. But then, if they have to work ANYWAY, perhaps a good tip would be worth it??? 😉

I don’t know of anyone cooking Christmas Day – quite a few have changed their celebrations to Christmas Eve. We sat outside last night and it was a really pleasant, cool evening. It was my younger brother-in-law’s turn to host – we had a really lovely evening.

Normally at this time of year I would say ‘YES!’, and some parts of our country are very hot right now – but where we are (house sitting in Mooloolah Valley), the temperature has been very pleasant due to some rainy weather. It’s always good to have a cooler Xmas day, it means cooking a roast meal doesn’t invoke heat stroke.

Oh my, thanks Calen. I just printed the recipe complete with photo. These potatoes sound wonderful and easy but my favorite part is the Name! They will forever be called Funeral Potatoes in this house! Here’s hoping the potatoes will be eaten at happy occasions and not…well, you know. 🙂 Merry Christmas!

Yeah, I know. I NEVER make them for funerals! I’m generally a “take a bag of rolls” kind of potlucker! But they’re great for family celebrations when you don’t want to mash potatoes. I’m lazy that way! Have a GREAT Christmas. Jeanne!!! Don’t get sunburned! 😀
